Sayulita was once a hidden beach village off the beaten path until Pinterest, Instagram and Bachelor in Paradise took over. It lies just 25 miles north of Puerto Vallarta along Riviera Nayarit and the Madre Occidental Mountain range. I attended the Women’s Rally at the Sam Boyd Stadium in Las Vegas this past January, and although this isn’t my favorite city in the world, or in the USA for that matter, it is surrounded by some amazing natural beauty and delicious allergen friendly eats (perhaps even worth revisiting). We had a lot of fun in Seoul this past spring and I was able to get my fill of Korean BBQ, KoMex (nm, no such thing as too much KoMex), Korean cosmetics, and raccoons (yes, raccoons). One Day (and Gluten Free) in Tokyo, Japan!

We had the pleasure of being able to hop over to Japan, after our visit to South Korea. I fell in love with Kyoto, and honestly expected to be overwhelmed by Tokyo. Well, it didn’t overwhelm me, but the quaint neighborhoods stole my heart with their intricate personalities, the new mixed with the old, and the spiritual and historical elements. Although it would probably take living there extensively to see and truly experience the city’s highlight and underrated spots, I came up with this easy one-day to-do list. I hope you enjoy the city as much as we did (minus ending up in the ER for anaphylaxis - long story), and I look forward to returning.

Korea Strait Horseshoe: South Korea to Japan

I recently ventured to South Korea with the American Red Cross' Service to the Armed Forces (SAF) program to facilitate workshops on Communication for children and adults on military bases. During my free time, I got to venture around South Korea, and even visited the Korean Demilitarized Zone (DMZ), the border between North and South Korea. This was a little nerve-wracking, considering I was present for two of North Korea's failed missile tests. Once our program was over in South Korea (City of Daegu), I hopped on a train to the southern city of South Korea, Busan and took a 3-hour ferry across the Sea of Japan to the southern city of Fukuoka. This was so much fun, and much less expensive than a flight. From there we took the train to Kyoto and later Tokyo, to explore and enjoy the culture, food and amazing surrounding Japan has to offer. It was a blast, and I look forward to returning back and exploring more of both countries in the future.

One Day in Idyllwild, California (and Gluten-Free!)

Tucked in the mountains of San Jacinto, and just a hop, skip and jump away (aka 2 hours) from both busy metropolises of Los Angeles and San Diego exists the beautiful and quaint town of Idyllwild. The town serves as nice escape for anyone. Whether that’s a solo getaway, camping trip with friends or family, or a romantic adventure, driving up the hill will sure be worth it.

Busan (pronounced Pousahn), is South Korea’s second largest city, and is at the southern end of the country, opposite of Seoul. It is boasted for having some of the best seafood in the country, and the largest geothermal spa in Asia. It is also just three hours by ferry from Fukuoka, Japan. In spending a couple of days there, I got down some of the must-do’s in this city.

Day Five: Puenta La Reina to Estella aka No mas albergues, por favor

No sleep last night. I mean, maybe 2 hours? Our room smelled of farts and BO. If that didn’t keep you up, it was the immensely loud snoring that ear plugs couldn’t cover. If you ever do the Camino, BRING EAR PLUGS. So two hours of sleep later, and prior to having to walk 15 miles to Estella, our ‘breakfast’ at the albergue was just as good as the sleep. A croissant, orange juice and coffee. I explained that I’m celiac (soy celiaca), and was offered an apple instead of a croissant...errrr. Being gluten free on the Camino is much easier than being vegan, but sometimes it sucks just as much. Especially when it’s too early for any markets to be open.

Day Four: Pamplona to Puenta la Reina aka Running with the Bulls

We got some great sleep last night, thanks to the awesome hotel we stayed in. We decided to explore Pamplona this AM, because it’s Pamplona ! It’s a medium sized city, with a lot to offer. Something I noticed was a lot of cute hip dads with their babies... Machismo-ness (real word) is so last century. We got to eat at Bar Gaucho aka Pinxtos heaven for brunch (most are naturally gluten/dairy free). I believe my future ex-husband, Anthony Bourdain paid a visit there. Nonetheless, it was the most highly recommended place to dine. Each pinxto was roughly €3 each, completely worthwhile. Getting out of the city was a pain, as there was some sort of ‘Old Pamplona’ festival.

How to Survive the Camino de Santiago Being Gluten and Dairy-Free

“But, the Spanish eat cheese and bread with everything!” This is what I commonly heard when talking to people about my diet restrictions prior to leaving on the Camino de Santiago de Compostela in Spain – a 500-mile pilgrimage that would require me eating close to 5,000 calories a day in order to handle trekking an average of 15 miles a day while carrying 15 lbs on my back. “Here’s to hoping the Camino provides” (a common phrase you hear throughout the walkabout) is what I would say in response.
