Matcha Blueberry Buckwheat Muffins 🌿
I’ve been pretty obsessed with my daily @vitalproteins matcha latte lately. So much so that I decided to scoop some into my buckwheat blueberry muffin batter, which gave it an extra kick, as well as upped the protein.
Recipe
1 cup buckwheat flour
1/2 cup flaxseeds
1/4 cup coconut flour
1 teaspoon salt
1/4 cup fresh organic blueberries
15 grams @vitalproteins collagen matcha
1/4 cup apple sauce
1 teaspoon cinnamon
1/2 cup coconut milk
3 tablespoons coconut oil
2 tablespoons @thedatelady syrup
2 tablespoons coconut sugar
Grease pan with coconut oil, and bake at 350°F for about 20 minutes or until done. Use a toothpick to test. Let cool for at least 15 minutes (blueberries will be warm). Sprinkle matcha, and or drizzle date syrup on top for added flavor. Enjoy 💚
